Banana Oatmeal Cookies

Hi all.
I don't know about all of you, but I am addicted to Pinterest. I decided I am going to try 1 new recipe a week & blog about it. Today, I am baking the awesome "2" Ingredient Banana Cookies that I found  here on The Burlap Bag. I got to it from Pinterest. You start with 2 bananas & 1 Cup Quick Oats. Easy Peasy. You can mix those 2 ingredients & bake or throw some add ins with it. I decided to add 1 small handful of chopped almonds, 1 small handful of pecans, 1 small handful of dried cranberries, 1 small handful white chocolate chips & 1/8tsp pumpkin pie spice. I wanted them full of flavor and something healthy, yet a bit a sweet. So easy to make. It only took me about 5 minutes to prepare everything. You grease your baking sheet, spoon out cookie mmix on pan & bake for 15min at 350*. Simple! Just mixing the cookie mix up it smelled so good!

They come out so nice and chewy. I love a soft cookie. I don't like the crunchy ones so this was perfect! The cookie held together nicely & taste great! Even the hubby said it was pretty good! (That is saying something)

  1. Hey, Amy, I'm going to try this recipe! It may already be one that Dennis has discovered on Pinterest which he's been wanting me to make. If not, then I think he'll still like this. Oh, and last week I made a recipe for banana ice cream and bananas is the only ingredient. It's pretty amazing. BTW, do the bananas in this recipe need to be super ripened or will a regular ready-to-eat banana work as well?

  2. The bananas don't have to be really ripe. Just a regular ripened one works. I personally prefer mine really ripe, they tend to be sweeter. Good luck & enjoy the recipe!

    1. I just finally got them made! I think they are really good (eaten 2 already), and Dennis thinks that it will be a good snack for him (or even breakfast, I think). No sugar, just the bananas and oatmeal. Thanks for sharing!! I will definitely make them again. I put some chopped walnuts in, some craisins, and a little cinnamon.
